Grandma’s Easy Pineapple Tarts

I’ve said it before and I will say it again, I LOVE LOVE LOVE fruity desserts! And let me tell you, this Grandma’s Easy Pineapple Tarts recipe did not disappoint my tastebuds! As a bonus, I also added Lemon Icing to the tarts. The result? AMAZING!

Pineapple Tarts

I know my willpower is basically nonexistent when it comes to sweet, heavenly desserts. Due to my lack of will power and the fact that we are in full swing with swimsuit season, I used Truvia to keep the calorie count down. I could not be happier with the results, delicious!!

How to make Grandma’s Easy Pineapple Tart Recipe

Ingredients

  • 3/4 cup pineapple jam
  • 10 tbsp of unsalted butter at room temperature
  • 3 ounces Truvia
  • 2 egg yolks
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups sifted all-purpose flour + more to flour surface of work area and rolling pin

Pineapple Tarts

Directions

  1. Preheat the oven to 350 degrees.
  2. In the bowl of a stand mixer, cream butter until small peaks form.
  3. Add the Truvia a little at a time and continue to mix until mixture is light and smooth.
  4. Pour in pure vanilla extract and two room temperature egg yolks and mix until the vanilla and yolks are fully incorporated.
  5. Remove the bowl from the stand mixer and sprinkle in corn flour. Using a rubber spatula scrape down the sides of the bowl and mix well.
  6. Sprinkle in the sifted flour a bit at a time until it is fully combined.
  7. On a lightly floured work surface roll out the dough to a 1/4 inch thickness.
  8. Using a cookie cutter, turn out ten discs.
  9. Spoon a half tablespoon of pineapple jam onto each disc.
  10. Fold each disc over and brush lightly with egg wash.
  11. Bake in a preheated oven for 15-20 minutes.

Lemon Icing (optional)

Ingredients:

  • 3 cups of powdered sugar
  • 1/3 cup of heavy whipping cream
  • 1 Meyer lemon rolled and juiced

Directions:

  1. In a large bowl add powdered sugar, heavy whipping cream, and the lemon juice.
  2. Mix the ingredients thoroughly using a small wire whisk or a table fork.
  3. Continue to whisk until all of the lumps have dissolved and the icing is smooth.
  4. Adjust consistency by adding more powdered sugar and whisking until the mixture is smooth.
