How to Make Salted Caramel Thumbprint Cookies
Prep time: 15 minutes
Yield: 3.5 dozen
Ingredients
1/2 cup butter
1/2 cup sugar
1 tsp vanilla
1 large egg
1 3/4 cup flour
1/4 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
Filling
5oz caramel bits
1 Tablespoon water
Directions
Preheat oven to 375°
1. Cream butter and sugar together using an electric mixer. Add vanilla and egg and mix well.
2. Sift all dry ingredients into a small mixing bowl, then gradually add to the wet ingredients. Place in the refrigerator to chill for 30 minutes.
3. Scoop dough out by 1/2 tablespoon and form into balls. Place on an ungreased baking sheet, then push thumb into the center to create a well for the filling.
4. Bake at 375 for 7-10 minutes. Allow the cookies to cool for a few minutes before transferring to a cooling rack. While cookies are baking, melt caramel bits and water over medium low heat stirring constantly. Carefully spoon the caramel into the center of each cookie and allow it to cool.
