I’ve shared a couple times over the last two months about my clean eating change. It started out as a diet to lose some weight before we went to Hawaii on our anniversary trip but has turned into a new way of life. Don’t get me wrong, we have our cheat meals here and there, I do miss my pizza and have to have a “fix” but I’d say we eat clean 80% of the time, maybe more.
One of my favorite meals to make is baked salmon with fresh veggies, it’s easy and so good. I usually would make a lemon sauce to put on the salmon until I came across Gorton’s Simply Bake Salmon with a roasted garlic and butter sauce. I decided to grab a couple of these to try because they’re a brand that I know and trust and boy am I glad I did.
First, it’s so stinkin easy to pop these in the oven to cook because they come in oven bags that you just place on your baking sheet and cook. No creating a foil pack with the salmon or mixing up a sauce to pour over it. You literally pull these out of the freezer and throw them on a pan to cook. Super quick and easy!
Second, they have amazing flavor!! Each filet has only 140 calories each but you would think they had so much more because they’re packed with flavor! The roasted garlic and butter are the perfect combination too. I think that by cooking these in the bags, it really makes the flavor amazing.
I like to make roasted veggies with our salmon and I have a super easy recipe that I use to make them. They pair perfectly with the Gorton’s Simply Bake Salmon, I can have dinner on the table in no time at all! Check out my lemon garlic veggie recipe below!
How to Make Roasted Lemon Garlic Veggies
Ingredients You Need
- 1 carton of Mushrooms, sliced
- 1 Bunch of Asparagus, cut into pieces
- 1 Red Pepper, cut into pieces
- 1 small Onion, cut into pieces
- 2 TBSP Olive Oil
- 1 TBSP Garlic, minced
- 1/2 Lemon, juiced
Instructions
Preheat the oven to 350 degrees. Start by cutting up all your veggies into roughly the same sized pieces. Place all the veggies in a bowl and add the olive oil, minced garlic, and lemon juice. Toss the vegetables until they are all covered with the oil and juice. Spread the vegetables on a baking sheet with the salmon at one end and the veggies at the other. Bake for 30 minutes and enjoy!
TIPS for the making Roasted Veggies in the oven
Cut the vegetables so they are all about the same size, this ensures that they bake about the same. You won’t end up with tough asparagus and soft peppers.
Buy Minced Garlic, I use a minced garlic that comes in a squeeze container. I just squeeze out the amount I need and save my hands from getting that garlic smell!
Don’t forget the seasoning! I like to add some salt & pepper to my veggies to give them a little more flavor. I’ve also added seasoning salt in the past for a delicious flavored vegtable.
Make a lot! I know it seems like you are cutting up a lot of veggies, but remember they cook down so make more than you think you’ll need!
Something else I love about Gorton’s is that they have more than just baked fish for me and my hubby to eat, my kids do love salmon but something they love even more is fish and chips! Gorton’s makes it easy to make their favorite Parmesan Garlic Fish and Chips by grabbing a bag of the delicious Fish Sticks and baking them for the kids while my salmon and veggies are cooking!
All I do to make these delicious Parmesan Garlic Fish and Chips are to start by layering the Gorton’s fish sticks out on the baking sheet with a good amount of french fries. Then I add about a tablespoon of garlic salt over everything along with a 1/2 cup of Parmesan cheese. Then I just bake them at 350 degrees for about 25 minutes.
The kids love to dip these in ranch dressing and absolutely love them! They’re not just for little guys either, my husband and I eat them too but we put them on our lettuce salad and turn it into a little bit of an adult meal!
