Shortcut Swedish Meatballs
Hi everyone! I'm so excited to be contributing recipes here at The Taylor House. My name is Jill and I blog about the food I'm feeding my family over at Foodtastic Mom. My husband and I have a 9 year old son and 7 year old daughter. They'll be entering the 4th and 2nd grades here in just a bit and while I'm always a bit sad to see the lazy days of summer go by the wayside, most of my inner self is doing a happy dance. School routines with swim team, dance and music lessons (for us) are busy to be sure, but it also means I'll have my quiet days back in my home kitchen and office.

I always feel super in my kitchen and my passion is cooking and baking from-scratch, but my family's reality dictates quick and easy dinners most days during the week. I love it when I find quality, pre-made foods that I can keep on-hand in our freezer or pantry and these turkey meatballs from Trader Joe's are one of my family's favorites. They are made from turkey, contain 100 calories for two big meatballs and taste fabulous. In the past, I've mixed them up with roasted veggies, pesto and pasta; I've used them as topping for homemade pizza; and I've made meatball subs with them.
When I ran across THIS recipe for Swedish meatballs, I knew my Trader Joe's turkey meatballs would make quick work of this tasty dinner. I switched up the recipe for the gravy enough to call it my own and the addition of apple butter and a bit of allspice makes this gravy a little sweet, savory and lot straight-up drinkable. To soak up all this golden deliciousness, mashed potatoes were an obvious side.

I recently began microwaving my mashed potatoes and it's been somewhat of a revelation for me, so I'm sharing that recipe as well. After scrubbing the potatoes and poking them so as not to explode, simply microwave for 10 minutes per side. I microwave butter, salt and fat-free half and half in a large glass bowl, then mash up the slightly cooled and peeled potatoes in the same bowl. Done! After numerous times of potato water boiling over on my stove, I prefer this method on a quick-dinner night for our family.

Shortcut Swedish Meatballs
Ingredients
- 1 pkg. Trader Joe's Turkey Meatballs
- 2 T. coconut oil
- 1 T. unsalted butter
- ¼ c. flour
- 2 c. low-sodium chicken broth
- ¼ c. apple butter
- 1 t. salt
- pinch of allspice
- 5 or 6 medium-sized Yukon gold potatoes well scrubbed
- 4 T. unsalted butter
- 1 c. fat-free half and half
- 1 t. salt
Instructions
- In a heavy stock pot, heat the coconut oil to melt over medium heat. Add the frozen meatballs and cover. Cook on one side for about 10 minutes. Flip, cover pot again and continue to cook for about 5 more minutes. Remove meatballs to a clean bowl.
- Add the tablespoon of butter and stir to melt. Add the flour and whisk, allowing to simmer for 2 minutes. Whisk in the chicken broth until smooth. Stir in the apple butter, salt and allspice.
- Bring to a simmer, whisk again and stir in the cooked meatballs. Allow meatballs to simmer in the gravy for a few minutes before serving.
- Meanwhile, place the potatoes on a microwave-safe plate. Poke each potato several times with a fork. Microwave on high for 10 minutes. Flip potatoes over and microwave for an additional 8 - 10 minutes, until potatoes are fork-tender. Place plate of potatoes immediately in the refrigerator to cool for about 10 minutes.
- In a large microwave-safe bowl, place the butter, salt and fat-free half and half. Microwave for 2 minutes.
- Carefully peel the cooked potatoes and add them to the bowl. Mash potatoes together with the melted butter, half and half and salt. Serve immediately.





One neat trick for boiling potatoes is to place a wooden spoon on the rim of your pan. It keeps the potatoes from boiling over.
