Simple Skillet Chocolate Chip Cookie

Delicious Skillet Chocolate Chip Cookie with a Caramel and Sea Salt Topping.  Although this sounds like a difficult recipe to make, it could not be easier! Topped with a vanilla bean ice cream, you have a dessert that everyone will love!


 

Simple Skillet Chocolate Chip Cookie

There’s something about chocolate chip cookies that makes me a little bit giddy and a lot happy, they’re a treat that I remember from my childhood fondly. Although my Mom was not much of a baker (sorry, Mom) I remember so many other Aunts, Grandma’s and friends making these delicious cookies regularly. It seems that any time we get together there were chocolate chip cookies involved!

I’ve made it my mission to make the BEST chocolate chip cookies around, it’s kind of a skill to make them properly. The best tip I can give anyone is to take them out of the oven before they’re done baking completely and let them finish baking on the hot cookie sheet. You’ll end up with the perfect soft and melty chocolate chip cookie every time if you follow this rule!

There’s a lot of times when I’m in a hurry and don’t have time to babysit ten different rounds in the oven so I’ll make a Skillet Chocolate Chip Cookie. This basically means that I make one giant cookie in my cast iron skillet (a pie plate works for this too). This is a lot quicker because you press the entire batch of cookie dough into one plate and cook it for about 20 minutes. Check out our recipe below!

Simple Skillet Chocolate Chip Cookie

This particular Skillet Chocolate Chip cookie is topped with a caramel and Hatteras Sea Salt topping. The combination of sweet and salty is my all time favorite so make sure you DO NOT skip this part of the recipe!

If you wondering about the Hatteras Sea Salt, let me give you a little backstory about it and how I came across it!

Last month I had an amazing trip to The Outer Banks, it was full of amazing food and we visited some pretty cool places. One of the days we took a short trip to Hatteras Island to see Cape Hatteras Lighthouse and climb over 250 steps to the top!

Anyone who knows me even a little will quickly learn that I am petrified of heights. Although I was hesitant, knowing the view from the top would be amazing, I pushed through and made it to the top and there’s even photo proof for those of you who might think this would have been impossible! 🙂

Cape Hatteras Lighthouse is actually the tallest lighthouse in North America, the cool thing about this lighthouse is that it was actually moved from its first location. When you are standing beside it, you wonder how they could have possibly accomplished this and kept it intact!

Cape Hatteras Lighthouse also offers full moon tours on several different days of the year! I’m sure the view is spectacular at night as well!

Another fun stop on Hatteras Island is Hatteras Saltworks, this is where the sea salt from this recipe comes from!

Brian and Shaena McMahon have been experimenting with different methods of producing sea salt for years. From the Carribean to the Pacific, and back to the Atlantic Ocean they have studied the crystals, evaporation methods, and practices possible to produce the purest sea salt available. The quest lead them back to Hatteras Island, where they now strive to give you a clean, mineral-rich ocean salt.

Hatteras Saltworks Sea Salt was the perfect salt to use on this Skillet Chocolate Chip cookie! It has the distinct ocean salt flavor that makes this dessert shine!

If you’re lucky, your kids will let you have more than a bite but if you hesitate even a little – you may not even get that! My kids INHALED this dessert and asked me to make it every day. They commented on how much they loved the sweet and salty combination as well!

How to Make A Skillet Chocolate Chip Cookie

INGREDIENTS:

  • 8 Tbsp. (1/2 Cup)  unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 2 tsp. vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. Hatteras Sea salt
  • 1 cup semi-sweet chocolate chips
  • vanilla ice cream

DIRECTIONS:

Preheat the oven to 350 degrees F and grease the bottom and sides of a 9-inch cast-iron skillet with butter or a cooking spray.

Add the 8 tablespoons of butter and the sugars to the bowl of a stand mixer and beat until light and fluffy.

Add the egg and vanilla, beating until well combined.

Add the flour, baking soda, and salt to a large bowl and mix to combine.

Add the dry ingredients to the wet ingredients, mixing on low.

Add the chocolate chips and mix on low until just combined.

Press the cookie dough into the prepared skillet and bake for 20 to 25 minutes, until the edges are crisp and the cookie is golden and cooked through.

Remove from oven and top with Caramel and Hatteras Sea Salt.

Serve warm topped with vanilla ice cream.
