South Carolina Caprese Peach Salad


Caprese Peach Salad, a twist on a traditional salad with a sweet and delicious flavor combination. This salad will be your NEW go-to summer favorite!


Instead of your traditional tomato Caprese salad, this version has a sweet surprise. Typically fresh tomatoes in a Caprese salad is my favorite, it's hard to beat fresh tomatoes during the summer here in Iowa.

I was lucky enough to receive a shipment of the freshest peaches around from Titan Farms in South Carolina and wanted to try a peach version of my favorite salad.

I knew after devouring the first one that I needed to use them in a fun new recipe. Typically, we grill peaches with some butter and brown sugar then add a large scoop of vanilla ice cream on top. It's the most amazing and simple dessert to make! If you've never tried it, I highly recommend. It doesn't get any easier!

Another easy way to make this salad is to simply layer mozzarella, peaches, and basil on a plate with a little drizzle of olive oil and some salt and pepper on top. It's the absolute easiest lunch you can make!

South Carolina Caprese Peach Salad

Ingredients
  

  • 4 medium peaches pitted and thinly sliced
  • 8 oz fresh mozzarella sliced
  • 4 cups chopped fresh romaine lettuce
  • ¼ cup Almonds & Cranberry Mix
  • ¼ cup minced fresh basil

Dressing:

  • ¼ cup balsamic vinegar
  • 2 tablespoons Honey
  • 1 tablespoon Dijon mustard
  • ¼ cup olive oil
  • Salt and pepper to taste

Instructions
 

  • In a large salad bowl, combine peaches, mozzarella, lettuce, almonds, cranberries and fresh basil.
  • In a small bowl, whisk the dressing ingredients until smooth. Season with salt and pepper to taste.
  • Just before serving, pour dressing over salad and toss to combine.
