St. Patty’s Mint Mousse

Here is the yummy Mint Mousse Recipe that I shared over at The Sweet Spot last week.  It is a perfect little treat for St. Patty’s Day!
I get a lot of my inspiration on Pinterest and I came across a recipe for Mint Mousse and decided to change it a little, to make it more of a St. Patty’s Day treat. 
Ingredients:
  • 1 small package instant pudding mix
  • 1 1/4 c. skim milk
  • 1 small tub cool whip
  • 1/2 tsp. peppermint extract
  • 10 Cookies crusher ( I used a striped fudge cookie)
  • Green Food Coloring
  • Andies Mints
Whisk together the pudding mix and milk until well combined, add the Cool Whip in.  I kept about half the contain of Cool Whip aside to use on top.

Put a layer of the pudding mix into the bottom of your bowl {I used small Mason Jars for mine}.

Add a layer of crushed cookies next.

Then another layer of pudding mix.

With the remaining Coop Whip, I put green food coloring  in and mixed it well.  Then put a little on top.  With a couple Andies Mints.  Doesn’t this look yummy?!

This is such an easy recipe, my boys loved it.  How can you really go wrong with Chocolate pudding and Cool whip?!

    When I was a kid, my grandmother used to keep Andes Mints in her house and I would stuff loads of them in my pockets on my way out the door. I think I will make this dessert in honer of her, thanks for the inspiration!!! Love the blog, I'm your newest follower!!
