Tuna Cheese Melt with Veggies

Yep, I said Tuna Cheese Melt. I didn't think I really liked tuna salad or tuna sandwiches but when I saw it on sale at our local grocery store, I thought I would give it was worth trying again.

I remember having tuna sandwiches when I was younger but I only ate it straight from the can with lots of salt on it, and to be honest it wasn't my favorite meal. Fast forward 15 years and I'm going to give it another shot after all I figured it I mixed enough Mayo in it, it would be wonderful no mater what!

I was pleasantly surprised with this Tuna and Cheese Melt recipe that I threw together for lunch!

Can I let you in on a little secret with this sandwich?  Do you see how delicious the bread looks?  It's all thick and crusty just like a perfect sandwich should be and it's Gluten Free.  Yep, you heard me right, It's a delicious Udi's Gluten Free Bread.

Wait, did you think if you were on a Gluten Free Diet you couldn't enjoy things like Grilled Cheese or Tuna Melts? Nope!  You can find an entire line of delicious products you may have thought you'd never get to enjoy again with a Gluten Free Diet.

Do you see the Snicker doodle cookies in the picture above?  I admittedly snarfed down the entire package of them by myself in about 30 minutes.  They were that good!  Seriously!

My family and I are not on Gluten Free Diets but I can see how easy it is to start to incorporate products and recipes into our diet with delicious tasting breads, cookies, chips and more like Udi's has to offer!

If you're nervous about making the switch, why not try replacing one food at a time or even having one day a week that you go Gluten Free?  Maybe you could have Gluten Free Friday?  They even have Gluten Free Pizza!  Yum!!

The Tuna and Cheese Melt that I made is not completely Gluten Free but I made the small change with the Udi's Millet-Chia Bread.  The sandwich is amazing!

How to Make Tuna and Cheese Melt

Ingredients

  • Udi's Millet-Chia Bread
  • 1 Can Tuna
  • ½ Cup Shredded Cheese
  • ¼ Cup Diced Red Onion
  • ½ Cup Diced Tomato
  • 1 Teaspoon Garlic Salt
  • 1 Cup Mayo
  • Butter

Instructions

Step 1 - Drain the tuna

Step 2 - Dice the onion and tomato

Step 3 - Mix all ingredients together in a small bowl

Step 4 - Butter One Side of two pieces of bread

Step 5 - Spread the Tuna onto the opposite side from the butter of one piece of bread and place butter side down into a hot pan

Step 6 - Top with the second piece of bread with the butter up

Step 7 - Grill the sandwich until it's browned and flip the sandwich and brown the second side.  Enjoy!
