Have you jumped on the Instant Pot bandwagon? It’s all the rage right now and the best way to make your meals next to the Slow Cooker.

We’ve been trying to make some low calorie and healthier meal options since the New Year and using the Instant Pot has really helped with that.  We can literally make a meal in minutes and it cuts back on the planning ahead when you want to use the slow cooker.

Instant Pot Tomato Basil Soup

This Instant Pot Tomato Basil Soup is a low calorie option because it’s really just tomatoes, onion, chicken stock and seasonings.  With a couple other low calorie ingredients that help make the flavor amazing.

Plus, you’re able to saute your onions in the Instant Pot, cook and even use the Immersion Blender all without dirtying another dish! It’s a major win for us Mom’s that want to spend less time in the kitchen.

This is one of the first recipes I made with my Instant Pot, it was super easy and it took a whole ten minutes to make!  It was a great recipe to get my feet wet with.

How to Make Instant Pot Tomato Basil Soup

Ingredients You Need

  • 1 Small Onion, diced
  • 1 T Olive Oil
  • 1 Small Can Tomato Paste
  • 3 15 ounce cans Diced Tomatoes
  • 2 c Chicken Stock
  • 2 teaspoons Parsley
  • 1 Tablespoon Basil
  • 1 teaspoon Garlic Salt
  • 1 Tablespoon Balsamic Vinegar
  • 1/4 Cup Sugar

Instructions

  1. Turn your Instant Pot to saute and let it heat.
  2. Dice your onion.
  3. Add olive oil, onion and tomato paste to the Instant Pot.
  4. Stir and let cook for a few minutes until onion softens and turns translucent.
  5. Turn off the Instant Pot and add your diced tomatoes (including the juices) and chicken stock.
  6. Add garlic salt, basil, and parsley.
  7. Turn the Instant Pot to soup, and set it for 10 minutes. Be sure the valve is set to closed.
  8. When the timer goes off, let it sit.
  9. After 10 minutes, release the pressure and open the Instant Pot.
  10. Stir in balsamic vinegar and sugar.
  11. Use your immersion blender to puree.
  12. Serve with Parmesan Cheese & a delicious Grilled Cheese Sandwich.
