10 Minute Bacon Pepper Dip

Hi there! Rachel from Craving some Creativity back today with a quick dip recipe. It has bacon, roasted red peppers, and cheddar cheese. I don't think you can go wrong with that combination. The holidays have officially started and that means fun holiday themed parties! This year I am hosting Christmas and New Years at my house and I really want to keep some quick snacks on hand to feed a crowd. Chips and a few excellent dips are a great way to satisfy a little twinge of hunger if everyone is waiting for the big meal. Oh, and this dip takes only 10 minutes to make because of some smart usage of Neuchatel (most people just think of it as ⅓ less-fat cream cheese). If you use the regular cream cheese, it will need to soften first.

Bacon Pepper Dip
4oz Neuchâtel or Cream Cheese Spread
6 Slices of Bacon
¼ Cup of Diced Roasted Red Pepper
1 Jalapeño, Diced (optional)
2 tablespoon Sour Cream or Greek Yogurt
2 Green Onions, Sliced
1 Cup of Shredded Cheddar Cheese
Crispy bread, Crackers, or Vegetables for dipping
Cook the bacon in the microwave on paper towels, about 1 minute per slice or until crispy. Crumble or dice the bacon strips. Mix all ingredients in a medium bowl. The flavors develop best when left for at least 2 hours or overnight. Serve with various accoutrements for dipping.
