The New Year is here and we’re jumping on the eating healthy bandwagon! I made this delicious Peppery Arugula Couscous Salad that’s loaded with flavor and beautiful colors! This made a great lunch for myself one day and it had me thinking that adding chicken to this salad would make it a great meal for my family too!

How to Make Arugula Couscous Salad
Ingredients You Need
- 1 Bag Washed Arugula
- 1 Package Couscous
- 1/2 Cup Dried Cranberries
- 1/2 Cup Toasted Almonds, slivered
- 1 Cup Shredded Cheese
- 1 Bag Roasted Corn, Thawed
- 1/2 Cup Dressing – I used a Juniper Berry Balsamic Vinegar mixed with Blood Orange Oil
Instructions
Step 1 – Make the Couscous according to the package instructions
Step 2 – Mix all the ingredients together except the arugula
Step 3 – Add the arugula to the salad right before serving and enjoy!
If you don’t have the salad dressing that I used on this, a simple raspberry vinaigrette or balsamic vinegar would work great! This salad is great for a girls get together or casual lunch with friends. Adding the chicken would make it a little more hearty too!
