Blueberry Pie Almond Cookie Bars

Don't you just crave something sweet sometimes?  It might be a cookie or a bar or maybe even a candy bar, but it has to be sweet.  I find myself making cookies for my boys all the time.  There favorite is chocolate chip cookies and Fall Baking Giant Monster Cookies HarvestFun.

I don't take the time to make the type of dessert or treat that I want to eat.  Until today.  My favorite desserts don't contain chocolate or peanut butter, it's always Lemon or Blueberry.  I made some very delicious Blueberry Pie Almond Cookie Bars that hit the spot!  These are very similar to Cherry Pie bars, I simply changed up the fruit that went into the bars.  I had these for lunch today, serious.

Blueberry Pie Bars

The Blueberry Pie bars turned out really thick and delicious, I only ate a small bar and was full which means that I have a lot to share with neighbors and friends too.  I think these pie bars would be perfect for a little brunch and coffee with friends.  Yum!

This recipe called for a cake pan which made the bars quite thick, I wonder if making them in a jelly roll pan would work out better next time and make a larger batch of bars.

I think that my boys will even love these cookie bars.  That will be the real test!

Blueberry Pie Bars


Blueberry Pie Almond Cookie Bars

Ingredients
  

  • Crust and Topping
  • 3 cups all-purpose flour
  • 1 ½ cups sugar
  • ¼ teaspoon salt
  • 1 ½ cups 3 sticks unsalted butter, chilled
  • Fruit Filling
  • 4 large eggs
  • 2 cups sugar
  • 1 cup sour cream
  • ¾ cup flour
  • pinch salt
  • 1 teaspoon almond extract
  • 2 16-oz packages frozen blueberries, thawed and drained

Instructions
 

  • Preheat the oven to 350 and grease a 9x13 pan.
  • Combine the flour, sugar, and salt in the bowl of a food processor. Pulse a few times to mix. Cut the butter into ½-inch cubes, and add to the flour mixture. Process until the butter is evenly distributed but the mixture is still crumbly, 30-60 seconds.
  • Reserve 1 ½ cups of the mixture to use as the topping. Press the remaining mixture into the bottom of the pan, and bake 12-15 minutes. Cool for at least 10 minutes.
  • To make the filling, whisk the eggs in a large bowl, then add the sugar, sour cream, flour, salt, lemon zest, and almond extract. Gently fold in the berries and spoon the mixture over the crust. Sprinkle the remaining flour mixture evenly over the filling, and bake 45 to 55 minutes.
  • Cool at least 1 hour before cutting into bars

  1. These look wonderful! After this long cold winter it's time for something new and this is it. Last summer I froze several pounds of fresh blueberries and now it's time to take some out. I was just wondering about how much lemon zest you added to the blueberry batter. I love lemon and blueberries together! Thank you
