Carrot Cake Bars with Cream Cheese Frosting

Just in time for Easter, we have a deliciously rich Carrot Cake Bars recipe to share with you. My Dad's favorite cake is Carrot Cake, so I remember my Mom making it for him once a year. It was always one of my favorite's too and feels like the perfect Easter dessert.
