Just in time for Easter, we have a deliciously rich Carrot Cake Bars recipe to share with you. My Dad’s favorite cake is Carrot Cake, so I remember my Mom making it for him once a year. It was always one of my favorite’s too and feels like the perfect Easter dessert.
I decided to make more of a bar version but don’t worry, they taste just like the cake I remember. Check out the recipe below and don’t miss the extra thick layer of frosting we put on, yum!
How to Make Carrot Cake Bars
Ingredients You Need

2 Cups Flour
-
1 1/4 Teaspoon Baking Powder

1 Teaspoon Baking Soda
-
2 Teaspoons Cinnamon
-
1/2 Teaspoon Salt
-
1 1/2 Cups Sugar
-
3/4 Cup Greek Yogurt
-
1/4 Cups Vegetable Oil
-
4 Eggs
-
3 Cups Peeled Shredded Carrots
Cream Cheese Frosting:
-
1/2 Cup Butter (Room Temperature)
-
8 Ounces Cream Cheese
-
2 Teaspoons Vanilla
-
1 Teaspoon Cinnamon
-
4 1/2 – 5 Cups Powdered Sugar
Instructions
Step 1 – Preheat the oven to 350 degrees and grease a 9×13 pan
Step 2 – Sift the flour, cinnamon, baking powder, baking soda and salt in a large bowl and set to the side
Step 3 – With an electric mixer, mix the sugar, yogurt and oil until combined
Step 4 – Add the Eggs, one at a time
Step 5 – Add the dry ingredients to the wet ingredients slowly
Step 6 – Fold in the carrots and pour into the prepared baking pan
Step 7 – Bake for 30 minutes or until a toothpick inserted comes out clean
Step 8 – Cool completely before frosting with the cream cheese frosting
To make the Cream Cheese Frosting simply use an electric mixer to cream the butter, cream cheese, vanilla and cinnamon together until smooth, add 2 cups of powdered sugar and mix until smooth then add the rest of the powdered sugar and mix until creamy and smooth.
