I can’t believe that I’m starting week three of my healthy eating and workout journey! I’ve committed myself to finding the time every single day to spend thirty minutes working out and not just cutting the junk out of my diet but trying to really eat more nutritious meals.
It’s been a huge success so far, last week I made a yummy Stuffed Pepper Soup that is going to make a regular appearance on our menu and now this Cauliflower Rice Chicken Stir Fry is too! Not only because it’s a nutritious meal but it’s super easy to make and delicious!

How to Make Cauliflower Rice Chicken Stir Fry
Ingredients You Need
- 2 Chicken Breasts, Diced
- 1 Package of Green Giant Riced Cauliflower and Sweet Potato
- 1 Package of Frozen Stir Fry Veggies
- 2 Tablespoons Stir Fry Sauce
- 2 Tablespoons Sesame Oil
- Salt & Pepper
Instructions
Step 1 – Cut your uncooked chicken into pieces.
Step 2 – Heat a skillet with 1 tablespoon Sesame oil over medium heat before adding the chicken. Cook the chicken for about 5 minutes before pushing it to the side of the pan.
Step 3 – Add another tablespoon of Sesame oil to the pan.
Step 4 – Add the veggies, cover the pan for 5 minutes before mixing the chicken and veggies together.
Step 5 – Stir in the Green Giant Riced Cauliflower and Sweet Potato and the stir fry sauce. Cook for another 4-5 minutes. Salt and Pepper to taste.
Enjoy!! I love that this meal is enough all on its own! No need for extra sides, bread, etc. Just grab a fork and dig in!
