Easy Recipe: Mexican Bubble Pizza

Do you make Bubble pizza for your family? It has always been one of our easy recipe meals that we have on a regular basis. The simplicity of cutting up Pillsbury biscuits and adding in a few easy ingredients to make a delicious meal is perfect for a busy weeknight.

I had Bubble Pizza on our menu this week and decided to make a Mexican twist and it turned out amazing and is one of our favorite meals.

Mexican Bubble Pizza uses ingredients that I usually have on hand and ready to go, I love recipes like this, where I don’t have to run to the store to pick up a million different things.

How to make Mexican Bubble Pizza

Ingredients

  • 3 Packages of Pillsbury Biscuits
  • 3 Cups Pizza Sauce ( I used Homemade)
  • 1 Pound of Taco Meat (I used Pepperoni in this pizza but added taco seasoning into my sauce)
  • 2 Cups Shredded Cheese
  • Italian Seasoning (optional)
  • Sour Cream
  • Tomatoes
  • Lettuce
  • Green Onions

Instructions

Step 1 – Brown your Meat and add the taco seasoning

Step 2 – Cut your Pillsbury Biscuits into fourths

Step 3 – Mix your Biscuits, meat, cheese and Sauce all together in one large bowl.  Spread out in your 9×13 pan (mine is an Oval shaped baker) and sprinkle cheese on top.

Step 4 – Bake at 350 degrees for 30 minutes or until the top is golden and crispy.  Be sure to check and make sure the middle biscuits are fully cooked.

Step 5 – Scoop out of the pan and top with taco fixings like sour cream, cheese, lettuce, tomatoes, green onions and more.  Enjoy!!

You could even top this with tortilla chips if you want and make it even more yummy!  I will be adding the taco meat into ours the next time I make it, but the pepperoni was really good too.  My boys had two serving each!
