Easy Recipes: Crockpot Chicken Fajitas

What are your go to recipes during the school year or when you are extremely busy with little time for making meals? I usually gravitate towards easy recipes for the Crockpot. I love being able to throw a few ingredients into it in the morning and that evening have a delicious meal ready to go.

Even though we are still in the summer months and my boys are at home, I still find it easier to make a Crockpot meal a couple times a week instead of spending that precious time in the kitchen cooking/baking.

This week I tried a new and easy Crockpot Chicken Fajitas recipe that was delicious and simple to make. The step that took the most time was cutting up the vegetables to put in with the chicken, this only took me about ten minutes. We love Crockpot tacos and chicken tacos but I had never thought of doing fajitas in the crockpot until recently.

How to Make Easy Crockpot Chicken Fajitas

Ingredients

  • Chicken Breasts ( I used chicken tender pieces)
  • Onion
  • Green Pepper
  • Red Pepper
  • Any other Vegetables you want to include
  • Fajita Mix or Taco Seasoning Mix
  • 1 cup of water

Instructions

Place all the ingredients into the Crockpot and set on low for 4-6 hours.  When you are about ready to eat, I use a fork and shred up my chicken in the crockpot.  Add sour cream, cheese and what ever other fixings your family loves and enjoy!

My hubby and I were on our own for a few days while my boys were at their Grandparents house and instead of going out for dinner I made this meal for us.  We loved it and were so glad that we had stayed home that night for dinner!

This easy recipe will be a new addition to our monthly menu list of recipes we love.

    Could this be cooked on high instead of low? And if so, how long should it cook for?

      I’d try cooking it on high for 2-3 hours and see how it turns out.

    Great idea. Have meant to look for crock pot recipe. Developed an aversion to touching raw meat sometimes while preggers. Kroger has the veggies fresh and frozen already cut if in a hurry. I’d just add frozen closer to end. Kitchen shears make cutting up meat much quicker!
