Lemon Poke Cake Dessert Recipe

I’m pretty sure that I’ve mentioned before that Lemon is my absolute very favorite dessert in the world.  It beats out chocolate, peanut butter and everything else for me.  I’m always looking for new recipes that I can use lemon in and make some delicious desserts like this Lemon Poke Cake.

This is is such a simple dessert to make and has a really light feel.  It would be a great Easter dessert or summer potluck option too.  I’m sure you could think of different ways to make this cake if you’re not a lemon fan, you could use chocolate, strawberries, caramel or other fillings.

How to Make Lemon Poke Cake

Ingredients

  • 1 Lemon Cake Mix
  • 1 Box of Lemon Pudding (make according to directions)
  • Cool Whip

Instructions

Step 1 – Make your Lemon Cake according to the box instructions for a 9×13 cake

Step 2 – While the cake is baking make your pudding according to the package instructions

Step 3 – After the cake if finished baking, use a wooden spoon and poke holes through out the cake

Step 4 – Pour your lemon pudding over the cake and spread it into the holes and all over the top of the cake

Step 5 – Top the cake with the Cool Whip and refrigerate for a couple hours or until you’re ready to eat.  Enjoy this easy dessert!
