Breakfast is my absolute favorite meal of the day, we have breakfast for dinner A LOT! My husband and I have been eating clean and using a lot of Whole 30 recipes over the last few months and eggs with veggies are always our fall back meal when I don’t have something planned for the day or meal. This little mini breakfast quiche recipe is pretty healthy too so we’ve had it many times.
We love adding broccoli to our mini quiche but you could easily swap out the broccoli with asparagus, pepper, mushroom or really any vegetable that you love! You could also leave out the vegetable if you’d prefer, but I think it’s a great way to get a little extra veggie into your diet!
The best part about this recipe is that you just use store-bought mini pie crusts! You don’t have to make a pie crust from scratch, we all know that that is pretty time consuming and in the mornings it’s just not always possible! Instead just grab a box of the store bought crust and you’re good to go!
MINI BREAKFAST QUICHE TIPS
Instead of making a mini breakfast quiche, you can easily turn this into one full-sized quiche using a regular pie plate and pie crust! We just like the mini bite-sized version for parties and quick out the door breakfast!
Make these ahead of time! They freeze and reheat really well! I like to make a large batch and have the kids just warm up a couple when they’re looking for a quick snack.
If you’re trying to eat clean or healthy, skip the pie crust! Use ghee in place of the butter and unsweetened almond milk! They’re just as delicious and fewer calories!

How to Make Mini Breakfast Quiche
Ingredients You Need
- 12 ready-made mini pie crusts
- ¼ small onion, finely diced
- 1 tbsp butter
- ¼ cup broccoli, chopped into mini florets
- ¼ cup cheddar cheese, grated
- 2 eggs
- ½ cup 3.25% milk
- Salt and pepper to taste
Yields: One dozen mini quiches
Instructions
Preheat oven to 350 degrees.
Once the oven is preheated, bake your mini pie crusts for about 8 minutes
In a buttered medium-sized skillet, start browning your onions over medium heat.
Place the browned onions, broccoli, and cheddar cheese into your baked pie crusts (about 1 teaspoon of each ingredient).
Whisk together eggs, milk, and salt and pepper. Pour egg mixture into each of your mini crusts. Bake for about 15 minutes or until quiche is set. Allow to cool for 10 minutes before serving.

Glass Measuring Bowl – mix everything together and pour from the same bowl!
