Peanut Butter Chocolate Chip Low Carb Mug Cake

Guess what? You can eat low carb, sugar-free, and still enjoy it! It is just a matter of swapping some ingredients for healthier options and getting creative with flavors. I

was really craving peanut butter and chocolate but I didn’t want to load up on sugar or make a full-size cake so I experimented in a mug in the microwave and came up with this delicious Peanut Butter Chocolate Chip Low Carb mug cake that got me through a pretty rough craving without sabotaging my better way of eating.

Textured just like a traditional cake with just enough sweetness and chocolate to treat yourself without overdoing it.

Peanut Butter Chocolate Chip Low Carb Mug Cake

Ingredients:

1 T. Coconut flour

1 T. Almond flour

2 T. Peanut butter flour

1 ½ T. sweetener of your choice

1 T. Almond or Coconut Milk

1 T. sugar-free chocolate chips

1 egg

1 ½ T. Coconut oil

¼ tsp. Vanilla extract

¼ tsp. Baking soda

Directions:

Spray a small coffee mug to coat with non-stick cooking spray ( I like to use coconut oil spray).

Combine the dry ingredients in a bowl.

Add wet ingredients, mix well by hand, finally fold in chocolate chips.

Scoop batter into your prepared mug.

Place in microwave for 45 seconds, check your cake top, continue cooking for 10 seconds at a time until the top is moist but not wet like batter. 45 seconds to 1 minute 10 seconds should do it, watch it closely to avoid overcooking.

Enjoy your individual portion of cake as it is or adds a scoop of sugar-free whipped topping for a really indulgent surprise.

This recipe is less than 5 net carbs excluding sugar alcohol and dietary fiber, it may vary slightly depending on the brands you use of various ingredients.
