Peppermint Cookie Ice Cream Sandwich

Have you guys figured out that I am on a Peppermint kick this year?  Between the Peppermint Hot Cocoa to the Candy Cane Cheesecakes, I have been creating everything with a minty flavor and twist for the holidays.

That is the case again with this dessert but it’s three times the Peppermint and Candy Cane goodness! Christmas only comes once a year so what’s the harm in getting a little crazy with the mint?

My oldest guy had a little sleep over last night to celebrate the first day of Christmas break and while they were playing and having fun, I put together this little treat for them.  They were almost too cute to eat, almost.

Peppermint Cookie Ice Cream Sandwich

Ok, have you seen this Peppermint Sugar Cookie dough that Pillsbury has in the refrigerator section?  I didn’t, until I sent my hubby to the store to pick me up some dough and he came home with this magical little tube of deliciousness.  How did I not find this earlier in the season?!  I had the ice cream sandwich idea for the kids and this dough was going to work perfectly to make them!

How to Make Peppermint Cookie Ice Cream Sandwich

Ingredients

  • 1 Tube of Pillsbury Peppermint Sugar Cookie Dough
  • Candy Cane Ice Cream (I used Kemps)
  • Crushed Candy Canes

Instructions

Step 1 – Bake Peppermint Sugar Cookies according to package instructions (Made 48 cookies)

    Step 2 – Let the cookies cool completely before adding the ice cream so that it doesn’t melt
    Step 3 – Place a big scoop of ice cream on one cookie and then squish a second cookie on top to create a sandwich.
    Step 4 – Roll the ice cream edge in the crushed candy cane.

That’s it!  You could also use sprinkles or even M&M’s to roll the edge of the ice cream in if you didn’t want to use Candy Cane.

Another delicious idea is to use a chocolate ice cream in the sandwich to make it more of a chocolate peppermint flavored treat.  There are so many different ways you could make these little goodies and they are so easy to do when you use the already made cookie dough.
