Quinoa Mexican Casserole

Quinoa is such a huge and popular ingredient right now.  We've used it in a cold Italian Quinoa Salad and also in our Quinoa Pancakes! Today we have a Quinoa Mexican Casserole to share with you that is a great Meatless Monday recipe idea!  It's not only delicious but it's simple to make!  Check it out!

Delicious and Simple Quinoa Mexican Casserole!

How to make Quinoa Mexican Casserole

 Ingredients You Need

  • 1 Cup Quinoa
  • 1 Can Enchilada Sauce (10 ounce)
  • ½ Cup Frozen Corn
  • ½ Cup Black Beans
  • ½ Cup Diced Tomatoes
  • 2 Tablespoons Cilantro
  • ½ Teaspoon Chili Powder
  • 1 ½ Cup Shredded Cheese

Directions

Step 1 - Cook your Quinoa according to the instructions

Step 2 - Mix the Quiinoa, Enchilada Sauce, Corn, Beans, Cilantro, Chili Powder and 1 Cup of Shredded Cheese together

Step 3 - Place the mixture in a baking dish and sprinkle with the other ½ cup cheese

Step 4 - Bake for 20 minutes

Step 5 - Sprinkle with diced tomatoes and more cilantro after you remove from the oven.  Enjoy!

You can add a little sour cream on top too if you want to give it a little more deliciousness!

Delicious and Simple to make Quinoa Mexican Casserole!

How amazing does this look?  You could also serve it as a side dish with your Taco's, Burritos, etc if you don't want to eat it as a main dish.  It was very filling though for us and my family was satisfied with just this as our meal.
