Rhubarb Crisp with Blackberries

May 22, 2014   |   2 Comments

One of the only things I grow in my backyard is Rhubarb, thanks to the lovely lady who built this home and left it behind for me.  I adore cooking with rhubarb every year, I love a delicious Rhubarb Crisp, Dream bars and all those delicious recipes that can be made once a year.

This past weekend I made a quick and easy Rhubarb Blackberry Crisp for dessert one evening. I had blackberries on hand but you could easily use strawberries, raspberries or leave out the second fruit.  This is a delicious dessert that is best eaten warm with some vanilla ice cream.  Yum!

I love rhubarb. With sugar, of course… Want to try this tomorrow, but am surprised it cooks in just 30 minutes! Really?
