One of the only things I grow in my backyard is Rhubarb, thanks to the lovely lady who built this home and left it behind for me. I adore cooking with rhubarb every year, I love a delicious Rhubarb Crisp, Dream bars and all those delicious recipes that can be made once a year.
This past weekend I made a quick and easy Rhubarb Blackberry Crisp for dessert one evening. I had blackberries on hand but you could easily use strawberries, raspberries or leave out the second fruit. This is a delicious dessert that is best eaten warm with some vanilla ice cream. Yum!
How to make Rhubarb Blackberry Crisp
Ingredients You Need
- 6 Medium Stalks Rhubarb, diced
- 1/2 Cup Sugar
- 2 Cups Blackberries
Topping
- 1 Cup Flour
- 1/2 Cup Rolled Oats
- 1/3 Cup Sugar
- 1/3 Cup Brown Sugar
- 1 Teaspoon Cinnamon
- 1/2 Cup Melted Butter
Instructions
Step 1 – Mix together the rhubarb, blackberries and sugar and pour into a 2 quart greased baking dish
Step 2 – Mix the topping ingredients together and sprinkle over the rhubarb mixture so that it is evenly covered
Step 3 – Bake at 350 degrees for 30 minutes or until browned, ever warm with vanilla ice cream!
If you ask me, this is the perfect summer BBQ dessert! I love a good Rhubarb Crisp with different fruit ad ins. The Blackberries are so sweet and delicious, it’s a great pairing with the tart rhubarb. The crumble on top with the oatmeal is delicious, you just can’t go wrong with this recipe!
