How to Make Slow Cooker Ranch Potatoes

Ingredients You Need

  • 1 lb red, purple, or white potatoes
  • 1-2 tablespoon ranch seasoning
  • 1 cup sour cream (or plain Greek yogurt)
  • 5 cups shredded Mexican cheese
  • ¼ cup diced red onion
  • Green onions and fresh parsley for topping

Instructions

  1. Rinse and cut potatoes into bite sized chunks.
  2. Dice red onion.
  3. In a small bowl, mix together ranch seasoning and sour cream.
  4. In a large bowl, combine potatoes, onion, and seasoning mixture.
  5. Mix together until all potatoes are coated, then add in half your cheese and repeat.
  6. Spray the inside of the slow cooker with nonstick, then spread potato mixture out into it evenly.
  7. Cook on low for 6 hours.
  8. Uncover final 10 minutes so that cheese can get crispy.
  9. Serve topped with green onions and parsley.

  • In a large bowl, combine potatoes, onion, and seasoning mixture.
  • Mix together until all potatoes are coated, then add in half your cheese and repeat.
  • Spray the inside of a casserole dish with nonstick, then spread potato mixture out into it evenly.
  • Cover with remaining cheese, then cover with foil and bake at 350 degrees for 35-40 minutes.
  • Uncover final 10 minutes so that cheese can get crispy.
  • Serve topped with green onions and parsley.
