There’s nothing better than home grown tomatoes in the summer. I look forward to them all year and I’ve been super lucky that my Mom does a lot of canning so we have the closest thing to fresh all year long. When I had the chance to partner with Ball on the #CanitForward project, I was thrilled to jump on board.
Although Mom does a ton of canning, I’m just getting started learning the ropes. I mean, I have a pressure canner and now I have the FreshTECH HarvestPro™ Sauce Maker to help me make recipes like this Tomato Basil Salsa. I’m on my way to being an expert canner!
One of my very favorite appetizers is Bruschetta or Caprese Bites, both of these use tomato and basil on them so I thought it would be fun and really handy to make a salsa version of it so that I could quickly top my bread and mozzarella with the tomato topping!
How to Make Tomato Basil Salsa
6-8 Fresh Tomatoes
1 Red Onion, diced
1 Clove Garlic, minced
2 Tablespoons Fresh Basil
Salt & Pepper
Instructions
I used the FreshTECH HarvestPro™ Sauce Maker to make my salsa but if you don’t have one follow these instructions:
Dice your tomatoes and red onion into small pieces, mince the garlic and mix everything together in a bowl. This makes enough to fill one pint sized Ball Jar.
