Creating a Healthy Strawberry Quinoa Breakfast Recipe
Have you started the New Year off with a healthy eating resolution? It seems like I do every year and this year is no exception. Plus, I’m doing a Pantry Challenge where I am using only ingredients from the pantry this month to feed my family and a budget of $100.
While I was looking through the pantry, I found a box of Quinoa and decided to make a quick breakfast for myself. First off let me tell you that I was not pronouncing this word correctly. I had a quick and rather embarrassing lesson from my good friend, Jenn, after she thought I was saying Granola and wondered why I was asking if I could put it in a salad too. Quinoa is not pronounced Qui-No-A. I think it’s the Minnesotan in me that thinks this is how you say it, you know kind of like Soo-Duh (Soda).
Even though I was saying it wrong, I managed to cook it right and even make a yummy breakfast for myself.
I will admit, I was a little bit scared of this ingredient. I don’t make a lot of healthy recipes, I like my butter and cream. Anything with chocolate and I can finish off a jar of pickles in a day on my own. So, using a “healthy” ingredient was a little different for me. I was pretty surprised with how delicious.
How to Make Strawberry Quinoa Breakfast
- 1 Cup Quinoa
- 2 Cups Strawberries (sliced)
- 1 Teaspoon Sugar
- Whipped Cream
Step 1 – Cook your Quinoa according to package directions and fluff with a fork
Step 2 – Mix in the strawberries and sugar
Step 3 – Top with Whipped Cream and more sliced strawberries (I ended up mixing my whip cream into the Quinoa and Strawberries and it was amazing)
This was great new ingredient to use! I can’t wait to share a few more healthy recipes with you using Quinoa as the main ingredient.
