This Bruschetta Chicken Bake Casserole is one of the simplest and most delicious dinner recipes, I know I say that about everything but it’s true! Someday I’m going to share a post with a bunch of failed recipes and things I do NOT like.
I’m starting to think that I have a problem with food and the amount that I make and eat. But, seriously, this is so yummy and is only a couple ingredients so it’s easy to make! It would be a great potluck dish or party dish for friends and family.
If you like chicken and tomatoes, add this to your list of things to make. It’s YUM!
How to Make Bruschetta Chicken Bake
Ingredients
- 4 Chicken Breasts (diced)
- 1 Box Chicken Stuffing
- 2 Cans Italian Seasoned Diced Tomatoes
- 2 Cups Mozzarella Cheese
- 1 Teaspoon Italian Seasoning
- 1 Teaspoon Garlic Salt
Instructions
Step 1 – Cut up the chicken breasts (uncooked) into bite-sized pieces
Step 2 – Mix together the chicken breast, diced tomatoes, stuffing (not cooked), cheese, Italian seasoning and garlic salt in a large bowl
Step 3 – Step the entire mixture into a greased baking dish (I used a large pie plate but a 9×13 pan works just fine too)
Step 4 – Bake at 350 for 30 minutes or until the top is brown and cheese melted. I added a small amount more mozzarella cheese on the top after I pulled it out of the oven. Enjoy!
Add a side salad to this and you the perfect meal, it would make a great Valentine’s Day dinner for you and your sweetie too.
I love Bruschetta and since it’s winter and there are no fresh tomatoes in Minnesota, this is a great option! Plus, with the chicken in the casserole, it’s an entire meal option.

I just made the chicken bruschetta casserole and my husband thought it was delicious. But it doesn’t look like yours – what size cans of to stir did you use.

I made this last week and OMG so good!!! I am making it again this week (well, preparing it) to take to a family to bake at home so they have a night off cooking (they just had their 2nd son). Delicious!
