Chocolate Chip Biscotti Recipe

 I absolutely love working with Truvia and creating delicious recipes using their products like these Chocolate Chip Biscotti. This is the perfect coffee dunking cookie for afternoon snacks or coffee with the girls!  You’ll be surprised just how easy it is to make Biscotti too! Check out our recipe!

Chocolate Chip Biscotti Recipe using our favorite Truvia Sugar Blend!

How to Make Chocolate Chip Biscotti with Truvia

Ingredients You Need

1/2 Cup Butter, softened

3/4 Cup Truvia Baking Blend

3 Eggs

2 Teaspoons Vanilla Extract

1 Teaspoon Baking Powder

3/4 Teaspoon Salt

3 Cups Flour

1 1/2 Cups Chocolate Chips (I used Mini)

Instructions

Step 1 – Preheat the oven to 375 Degrees and line your baking sheet with Silpat

Step 2 – In a stand mixer, cream together the butter and Truvia Baking Blend Sugar on medium speed until it’s light and fluffy.

Step 3 – Add the eggs one at a time, betting well and scraping down the sides of the bowl as needed

Step 4 – Beat in the Vanilla Extract, baking powder and salt

Step 5 – Reduce the speed to low and gradually add the flour until it’s well incorporated

Step 6 – Add the chocolate chips and mix on low quickly

Step 7 – Turn the dough out onto a lightly floured work surface and divide in half

Step 8- Shape the dough into long logs that are about 10 inches and 3 inches wide and transfer to the baking sheet

Step 9 – Bake for 20 minutes or until they are lightly browned, remove from the oven and let rest for 20 minutes

Step 10 – Reduce the oven temperature to 300 degrees

Step 11 – Transfer the logs to a cutting board and use a serrated knife to slice them on the diagonal about 3/4 inch slices and return to the baking sheet

Step 12 – Bake for 15 more minutes and enjoy!
