Strawberry Shortcake

Anything with fruit is healthy.  Am I right? Just because it has cookie, whip cream and chocolate too does not mean that it could be bad for you.  It has strawberries! 

This is what I keep telling myself anyway.  I love finding strawberry shortcake recipes or recipes with strawberries in general, because they are my favorite desserts,  this recipe was no exception.

These little bite sized Strawberry Shortcake Sugar Cookie Cups are the perfect size for anyone.  They make a great snack for little kids, after school snacks, to go with brunch or maybe even for a girls night party like I made them for. 

What makes these treats even easier, is that you can buy store bought Pillsbury sugar cookie dough to make the cookie cups with.  That cuts out one step and makes these really quick when you are short on time. 

Start with using a Mimi muffin tin, cookie dough and something to push the dough into the tin with.  Each refrigerator cookie fits perfectly into the mini muffin cup.  You are going to love these Strawberry Shortcake Sugar Cookie Cups, they are so easy and beautiful.

You can fill these cookie cups with just about anything.  Here are a list of options that I think would be yummy.

  • Fruit (strawberries, blackberries, raspberries)
  • Frosting and sprinkles
  • Pudding
  • Whip Cream
  • Ice Cream
  • Chocolate fudge

Strawberry Shortcake Sugar Cookie Cups

Ingredients

  • Pillsbury Sugar cookie Dough
  • Strawberries (or any filler)
  • Whip Cream
  • Chocolate

Instructions

  1. Press one cookie into greased mini muffin tin, repeat for all cookies in the package so that each cookie is in it’s own muffin space.
  2. Bake according to package directions.
  3. Cool.
  4. Fill with strawberries.
  5. Top with whip cream and chocolate drizzle.
