Lemon Brownies

I feel like I have been sharing a lot of recipes lately! But, let me tell you, this one is one of my VERY favorites!! If I haven’t said it before, I am a lemon freak!! I could eat lemon anything. This is a recipe for Lemon Brownies and they are amazing! I shared these at a “My Favorite Things” party today {details to come} and they went over well. I hope you give them a try!

Just a quick note, I use parchment paper on the bottom.  They come out so easily so that you are able to cut them on a flat cutting board.


These are so moist and delicious!  If you like lemon, I promise you will love these! 


Lemon Brownies
Lemon Brownies

  • 3/4 C All Purpose flour
  • 3/4 C sugar
  • 1/4 teaspoon salt
  • 1 stick butter, soft
  • 2 eggs
  • 1 Tablespoon of Lemon juice
  • zest from 1/2 lemon (about 1t)
Combine the flour, sugar and salt in a large bowl.
Mix in the softened butter.
In another bowl whisk the eggs with the lemon juice and zest.
Add to the larger bowl and mix well.
Pour into prepared 8X8 brownie pan.
Bake at 350 for 25 minutes.
You can double the recipe and bake in a
9X13 pan for 30 minutes.
Remove and let cool, then glaze.

  • 1/2C powdered sugar
  • 1 T lemon juice
  • additional lemon zest

Stir together!

    They taste amazing! But they are really flat and I was wondering if we needed to add anything else to them?

      Hi,I’m going to try these today and after reading about them being flat by so many people I think I will add a 1/2 teaspoon of baking soda after seeing baking powder in a lot of other brownie recipes.

    These brownies were very tasty, but I should’ve followed the “doubling” recipe – I didn’t realize how small amount this recipe makes – At any rate, they turned out great and were delicious! Just need to double the recipe next time for when I have guests….Thanks for sharing!

    I made these for a coworker’s birthday today and they were delicious! Looked just like the picture, dense like a brownie. I made a blueberry compote to top them with. Everybody loved them! Had many requests for the recipe. Yummy!

    I made these tonight & even though they tasted great they were very flat. What did I do wrong? I followed the recipe to the T.

    These were a hit and were fighting over them.I had no problem with them and doubled recipee!

    I followed the recipie carefully and the batter did not rise and had a cornbread texture. I substituted Splenda for sugar.

    These look simple to make but really yummy. I have a ton of ripe lemons on my Meyer tree right now. Have any of you ever tried freezing this recipe? Does it freeze well?

    How much is a stick of butter please? In New Zealand, butter comes in 500g lots.

      a stick of butter is 1/4 pound. a pound is 454 grams. I think 125 grams would work fine.

      Hello. A stick of butter is 1/2 cup in the US. Hope this is helpful.

    I used Limes as they were all i had,they weren’t as fluffy as yours maybe S.R. flour would be better. The Lime was nice though.

    I just made this recipe after finding it on Pinterest. I followed it to a T, but it only filled half of my 8 x 8 pan and it’s sticky and greasy, it also stuck to the parchment paper. Is there something missing?

      Important: You have to grease the parchment paper first so the food does not stick.

    These look amazing! Pardon my ignorance, however, I live in France and I’m not entirely sure how much a stick of butter is? Is it simply a block of butter – ie. approx 250g? Thanks! Gillian

    I baked these today ( I have been baking for over 40 years ) and though the flavor is very good ;the height of the brownie was half the size of the pictures – barely 1 inch and denser not as cakey looking as the photos . There is no leavening so I'm wondering about the accuracy of the photos ?

      I have had some people have that problem, I'm not really sure why. You can click on the “source” above and see where I got the recipe and it doesn't call for any leavening. The pictures I took are VERY close up, but I would say they were about 1 1/2 inches thick. I would be happy to make them again and and see how them come out.

    Do you use any baking soda or baking powder? Mine weren't near as thick as yours and I noticed in the recipe that it didn't list either of those. Thanks for sharing!!!

    I'm not much of a lemon fan…my Mother would love these though…I'm wondering if I could use pineapple extract & make a pineapple glaze for it…*wheels spinning* going to def give these a try!!

    I added strawberries to both the batter and the glaze – also poked holes in the brownies and added glaze when they were still warm so they were extra gooey. Yum!! And lovely pale pink shade!

      Hmmm, that's odd if you used an 8×8 pan.

      The recipe states at #7 that you can double the it for a 13 x 9 in. pan.

    I love making lemon bars. I have a ton of recipes for bars because my family loves them so much. I mostly use the Martha Stewart recipe. This recipe is similar. I'm going to give these a try. They look so delicious in the photos. Thanks for sharing. I'll let you know how they turn out. Probably make them this weekend.
