Coconut Almond Truffles

Easter is just a week away and I realized that I hadn’t really created any new Easter recipes!  I do have a good excuse though, we were selling our house AND on vacation in Cancun!  It was such an amazing trip but I have to admit that I kind of missed blogging!  I think that means I love what I do!

These Coconut Almond Truffles kind of look like Bunny tails and they would make a perfect Easter treat!  Plus they’re simple to make with only four ingredients required and they take about 15 minutes to make!  Check out the recipe!

How to Make Coconut Almond Truffles

Ingredients You Need

  • 8 ounces Cream Cheese, softened
  • 5 Cups Powdered Sugar
  • 1 Teaspoon Rodelle Almond Extract
  • 2 Cups Coconut Flakes

Instructions

Step 1 – Mix together the cream cheese, powdered sugar and Rodelle Almond Extract in a stand mixer until it’s smooth and completely incorporated together

Step 2 – Using a small cookie scoop form one inch balls

Step 3 – Roll the almond cream cheese balls in coconut and place on a cookie sheet and refrigerate for 10 minutes or until you’re ready to eat!  Enjoy!

I’ve been a huge fan of Rodelle Vanilla and it was pretty much the only vanilla that I would use.  I’ve been so lucky this year to be able to work with Rodelle as an ambassador and get to know many of their other products like this Almond Extract, Lemon Extract and their Baking Cocoa.  These are ingredients I’ve used recently and grew to love quickly!  There’s just no comparing great products like these to other brands!
