Homemade Cosmic Brownie Recipe

Cosmic Brownies

I've mentioned it before and I'm sure I will again, my oldest guy LOVES his brownies! We make them several times a week is we're not buying Little Debbie Cosmic Brownies! They're his all-time favorite! When we're camping during the summer we make campfire brownies. He loves them any and all ways!

I love making homemade brownies, you really can't screw them up and they are so fudgy and delicious! After you make brownies from scratch one time, you'll never make them from a box again!

Cosmic Brownie Ingredients

How to Make Homemade Cosmic Brownies

Ingredients You Need

¾ cup melted Butter
2 Eggs
1 cup Sugar
⅔ cup Brown Sugar
2 tablespoon Water
2 teaspoon Vanilla
¾ cup Unsweetened Cocoa Powder
¾ cup Flour

Chocolate Frosting For Brownies:
1 ½ cup Semi-Sweet Chips
½ cup Heavy Cream
Candy Sprinkle decorations

Instructions for Making Cosmic Brownie

Preheat oven to 350.
Line a 9×13  pan with parchment paper or aluminum foil and spray with nonstick spray.
Next, combine melted butter, eggs, sugar, brown sugar and vanilla in a stand mixer (Like a KitchenAid)
Whisk in the cocoa powder until incorporated, next add the flour and stir until just incorporated.
Pour batter into prepared pan.
Bake 25 30 minutes or until a toothpick inserted in the center comes out clean.
Allow to cool in the pan, or pop them in the refrigerator to cool faster.
Microwave chocolate chips and cream in a medium bowl for 30 seconds
Whisk until smooth.
Pour icing over cooled brownies and lightly smooth.
Refrigerate for 15-30 minutes to allow icing to slightly firm.
Add sprinkles to the top and return to refrigerator to finish setting.

Brownie Chocolate Frosting

TIPS for MAKING HOMEMADE BROWNIES

Use a good Cocoa Baking Powder - You can tell a difference!! My favorite is Rodelle but there are tons of great options out there!

Let the Brownies cool before frosting! Otherwise, you end up with a melty mess!!

Use a Plastic Knife to cut the brownies! You'll get clean lines every time!! If you don't have a plastic knife, let your brownies set up in the refrigerator before trying to cut them.

For thicker brownies use an 8x8 or 9x9 pan, for thinner brownies use a 9x13. I usually use a 9x13 pan because thick brownies are too rich for me!

Don't overbake the brownies or they will end up hard and crumbly!
