Simple TWO Ingredient Pumpkin Muffins

We all love simple recipes and this one is one of those hands down easy recipes not to mention it’s the perfect fall Pumpkin Muffins Recipe to make for your kids, family or friends.

These muffins have TWO ingredients, yep two!  It doesn’t get any easier than that!  I have to honestly tell you that I made a batch of these for my boys as an after school snack and by the next morning there were 2 left!  My oldest guy loved them and could not stop eating them!  Before he left for school today, he asked if I would make another batch!

How to Make Two Ingredient Pumpkin Muffins

Ingredients

Are you ready for this?  There are just two!  Serious!

1 Can of Pumpkin Puree

1 Spice Cake Mix (I used Betty Crocker)

That’s it!  No eggs, no oil, nothing else!

Instructions

I’m sure you can imagine it’s pretty easy with just the simple two ingredients!

All you need to do is mix the Pumpkin Puree with the Spice Cake Mix until it is well combined.  Fill your muffin cups 2/3 full and back on 350 degrees for 20 minutes or until a tooth pick inserted comes out clean.

That’s it!  This recipe made 18 full sized muffins for me.

I used our Homemade Pumpkin Butter on my muffins and it was amazing!  I’m sure a delicious Cinnamon Honey Butter or even plain butter would be yummy on them as well.

My son took the remaining muffins to school in his bag for his morning snack, he really loved them!

These would make a yummy addition to a Thanksgiving brunch or even as a dessert option if you add a Maple Butter Frosting on top.

    What size can of pumpkin puree do you use?

    These are also delicious if you use devils food cake mix and pumpkin. I usually add mini chocolate chips too.

    I really did not think this would work but was very pleasantly surprised. Made mini- muffins (glazed). All is well although I will put a drop of lemon juice in the glaze if I use it again. Muffins are sweet enough without any topping.

      I’m so glad they turned out for you, Pat! My kids loved them and I did too. I love the idea of putting a little glaze on them! I will have to do that next time!
