Souper Sunday: Slow Cooker Taco Soup

It’s Sunday again!  If you missed last week let me tell you about our new weekly series we have each Sunday.  Souper Sunday is where we are sharing a new Slow Cooker Soup Recipe with you every Sunday.  We will have new recipes to try out and hopefully you will find some you enjoy and add into your Menu from time to time.   This week we have a taco soup slow cooker recipe for you to try!

Last week was our first week and we shared a delicious and creamy Cheeseburger Soup, it became one of our favorites after trying it once!  Be sure to stop by and check that recipe out.

Today we have a taco soup slow cooker recipe for you or as my husband calls it “Semi-spicy Chili” because it has taco seasoning instead of the spicy chili peppers and seasoning.

How to make Taco Soup Slow Cooker Recipe

Ingredients

    • 1 lb. ground beef
    • 1/2 cup onion, chopped
    • 3 cloves garlic, minced
    • 1 Package taco seasoning
    • 2-28 oz. cans crushed tomatoes
    • 2-15 oz. can Pinto Beans, rinsed
    • 1-15 oz. can corn, rinsed (I don’t use)
    • 1 Cup Water
    • cheddar cheese, sour cream, crushed tortilla chips (We use Doritos) for serving

Instructions

Step 1 – In a large pan brown your beef with onion and garlic.

Step 2 – Place your beef a the slow cooker

Step 3 – Add the taco seasoning, tomatoes, rinsed beans, water and corn to the slow cooker

Step 4 – Cook on low for 6 hours.

Step 5 – Before serving top with cheese, sour cream and chips.  Enjoy!

This soup is delicious and our Sweet Honey Cornbread goes perfectly with it and makes an amazing meal. This recipe is one that we make every month, it makes really good leftovers too and freezes well if needed.

    Ive just put it all in the crock pot, but im wondering if i could add some quinoa in there to give it an extra boost? Add with everything or after?

      Hi, Corissa! Thanks for the comment! I just put the water in the slow cooker with everything else. This easily made enough for 8 of use with plenty of left overs. I hope that helps!
