During the summer months one my favorite snacks and appetizers is Bruschetta. I could eat it every single day because I love the combination of a crispy bread, soft melty cheese and a sweet tomato on top. Drizzle it with a tiny bit of Balsamic Glaze from Trader Joes and I’m in heaven.
Last week before having some friends over I decided to make a Tomato and Feta Bruschetta recipe that was down right delicious! This was a great twist on the traditional Bruschetta that we make in the summer. Check out the yummy recipe!
How to Make Tomato and Feta Bruschetta
Ingredients You Need
- 6 Ounces Feta, Crumbled
- 2 Ounces Cream Cheese
- 1/3 Cup Olive Oil
- 2 Tablespoons Lemon Juice
- 1 Teaspoon Garlic Salt
- French Bread
- Tomatoes
Instructions for Making
Step 1 – Cut the French bread on a diagonal and coat with a olive oil and broil on high for about 3 minutes or until its browned
Step 2 – Cream the Feta Cheese, Cream Cheese and olive oil together in a stand mixer
Step 3 – Add the lemon juice and garlic to the cheese mixture and mix well
Step 4 – After the bread is browned, spread a layer of the Feta spread over the bread and top with tomatoes. Enjoy!
This is such a simple appetizer or snack idea. It’s great for entertaining because it’s a great finger food option plus it has great flavor!
