Coconut Flour Blueberry Muffins
Who uses Coconut Flour or Coconut Oil regularly in their baking and cooking? We've made everything from Chocolate Cake and Chocolate Chip Cookies to these delicious Blueberry Muffins with Coconut Oil.
Today is the first time that I used Coconut Flour in a recipe though and I cannot tell you how excited I am about the way they came out - if you love coconut these are for you!

One of the best parts of this recipe are the brands that I worked with to make the recipe possible. Last year I met Fair Trade and had the chance to work with them on a recipe, our Microwave Mug Brownies. What I didn't know when I started that project was that I would have the chance to not just work on a delicious recipe but learn a lot about Fair Trade and why they do what they do.
October is actually Fair Trade month and I love the chance to help promote this great cause. Buying Fair Trade means you're getting high quality products and the people who grow, sew and craft them get fair compensation for their hard work. It's a win/win situation!

How to Make Blueberry Muffins with Coconut Flour
Ingredients You Need
3 eggs
3 T Coconut Oil, melted
3 T Sugar
⅛ t Almond Extract
¼ t Sea Salt
¼ C Coconut Flour
½ t Baking Powder
½ C Bueberries
Preheat oven to 400 degrees F
Microwave the coconut oil for 30 seconds to melt.
Blend all ingredients, except the blueberries, in a high speed blender until smooth.
Fold the blueberries into the batter.
Pour the batter into 6 lined muffin cups.
Bake for 16 minutes and enjoy!

I love fair trade coffee!
Those muffins sound amazing! I'm always looking for healthy ways to make our favorite treats and this totally fits the bill. I've never used coconut flour and am excited to try it!
We love our Fair Trade Coconut Oil, though I can't recall the brand name right now. I also love Arrowhead Mill products. The quality is top notch and I feel good buying their products knowing they don't exploit their workers.
